With the school year starting, the BBQ invites are slowing down and you’re likely starting to get back into a regular routine after a summer of packed schedules and summer cookouts. I have a 1st grader this year which means I have a new responsibility of packing lunches every day. Well, let’s just say that after the first few days of lunches that returned home the way they were packed, I had some hungry kids after school that couldn’t wait until dinnertime. This Cowboy Salsa is not only a great after school snack to hold little ones over until dinnertime, but it’s also perfect for the last of those summer BBQ’s and get togethers! It’s PACKED with veggies which makes it healthy and other than chopping the veggies, takes NO time to prep! That’s MY kind of potluck dish! For those of you that have hungry kids after school or that last minute BBQ you forgot to prep for, this dish is perfect for you!
Prep Time: 10 min.
- 3 large tomatoes (diced)
- 1 can corn (drained)
- 1 can black beans (rinsed & drained)
- 1 can black eyes peas (rinsed & drained)
- 1/2 red onion (diced)
- 1 green bell pepper (diced)
- 3 cloves garlic (minced)
- 1/2 cup cilantro
- 1/2 teaspoon cumin
- 1/2 cup zesty Italian dressing
- Sea salt & pepper to taste
In a bowl, combine all ingredients. If you have time, refrigerate for a couple hours but okay to take and serve freshly made as well. Flavors will combine as time passes. Serve with whole grain tortilla chips or other chip variety. (Juanita’s chips are my weakness and to be honest, fall into the 80/20 plan when implementing a clean eating plan!)
