I’m not much of a sweet tooth but every once in a while I’ll crave something sweet. Ever since I started on my health & fitness journey with the 21 Day Fix, I’ve been trying to stay away from refined sugar. Enter MEDJOOL DATES. Who knew there were so many possibilities with these little fruits? You can eat them on their own, with other finger foods like cheese and crackers, fill them with cream cheese and pistachios, wrap them with bacon or prosciutto but that’s not all! You can use them in place of sugar for many cooking recipes. Stews, sauces and baked goods – all with recipes that normally call for sugar – in many cases can be replaced with medjool dates. So when I randomly had a craving for peanut butter cookies, these mini 2-Ingredient Peanut Butter Cookies did the trick as all I wanted was a little bite! These are SUPER easy to make and take almost no time at all! Perfect for someone who doesn’t bake a whole lot (as there’s no baking involved!).

Prep Time: 5 min.
- 1 cup pitted Medjool Dates
- 1/2 cup Roasted Peanuts
In a food processor, pulse medjool dates until it forms a paste.
Add in peanuts and pulse until finely chopped.
Using damp hands, form into 1″ balls. Using the back of a fork, press down, turn 90 degrees and press down again to form indents.
Store in an airtight container for up to a week or individually wrap in wax paper and freeze (though I promise you, they won’t last long!).
